Description

A delicious and creamy cheese dip made with sharp cheddar, cream cheese, diced tomatoes, and green chiles.


Ingredients

  • 2 cups shredded sharp cheddar cheese
  • 4 oz cream cheese
  • 1 cup evaporated milk
  • 1 can (10 oz) diced tomatoes with green chiles
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly.
  2. Slowly whisk in the evaporated milk. Continue to whisk until the mixture begins to thicken.
  3. Add cream cheese and stir until melted and smooth.
  4. Add cheddar cheese a handful at a time, stirring until fully melted and combined.
  5. Mix in the diced tomatoes with green chiles, garlic powder, onion powder, and cayenne pepper.
  6. Heat through, then transfer to a bowl or slow cooker and serve warm.

Notes

  • This dip can be served with tortilla chips, crackers, or veggies.
