Ingredients

- 1 tsp baking powder

- 0 tsp salt
- 1 cup unsalted butter (softened)
- 0 cup brown sugar (packed)
- 0 cup granulated sugar
- 1 egg (large)
- 1 tsp vanilla extract
- 1 box instant pistachio pudding mix (3 oz)
- 0 cup chopped pistachios (optional)
- 0 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream butter and sugars until light and fluffy.
- Add egg, vanilla, and pistachio pudding mix; mix until smooth.
- Gradually mix in dry ingredients until just combined.
- Fold in pistachios and white chocolate chips if using.
- Scoop dough onto baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes until edges are set. Cool on wire rack.

- For extra flavor, add some chopped nuts or chocolate chips.
