Description

Delicious beef fajitas with colorful bell peppers, perfect for a quick dinner.


Ingredients

  • 1 lb beef sirloin or flank steak (thinly sliced)
  • 1 onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 cloves garlic (minced)
  • 8 small flour tortillas
  • shredded cheese
  • sour cream
  • sliced avocado
  • fresh cilantro (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss together the beef slices, sliced onion, sliced bell peppers, olive oil, and fajita seasoning until everything is evenly coated.
  3. Spread the beef and vegetable mixture evenly onto a large baking sheet lined with parchment paper or aluminum foil.
  4. Bake in the preheated oven for about 20-25 minutes, or until the beef is cooked through and the vegetables are tender, stirring halfway through cooking.
  5. While the beef and vegetables are baking, warm the flour tortillas in a skillet or microwave according to package instructions.
  6. Once the beef and vegetables are cooked, remove them from the oven and serve immediately with warmed tortillas and optional toppings.
