Description
A delicious stir-fry featuring crispy tofu and a creamy peanut butter sauce.
Ingredients
Scale
- 1 inch piece of ginger (peeled and sliced)
- 1 clove garlic (minced)
- ½ cup unsalted creamy peanut butter
- ¼ cup soy sauce
- 3 tbsp apple cider vinegar
- 1 tsp Sriracha sauce
- 2 tbsp toasted sesame oil
- 1 tsp honey
- 2 tbsp vegetable oil
- 14 oz extra firm tofu (drained, cut into 1-inch cubes)
- 2 cups roughly chopped Napa cabbage
- 2 cups broccoli florets
- 1 tbsp sesame seeds (for serving, optional)
Instructions
- To make the sauce, add all the ingredients to a food processor and process until smooth.
- Set aside.
- Heat the vegetable oil in a large skillet over medium high heat.
- Add the tofu and fry on each side, until golden brown.
- Remove the tofu from the skillet.
- Add the broccoli and cabbage to the skillet and fry for 8 minutes or until tender.
- Return the tofu to the skillet.
- Add the peanut butter sauce and stir to combine.
- Cook for 1-2 minutes or until slightly thickened.
- Remove from the heat.
- Sprinkle with sesame seeds and serve.
Notes
- Serve with rice or noodles for a complete meal.
- Adjust the Sriracha based on your spice preference.
- Add additional vegetables as desired.
