Description

These Loaded Nachos are a crowd-pleasing appetizer or snack, featuring crispy tortilla chips topped with melted cheese, black beans, fresh veggies, and your favorite dips.


Ingredients

  • 10 oz tortilla chips (approx. 1 bag)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup canned black beans, rinsed and drained
  • 1 bell pepper, finely diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, thinly sliced (optional)
  • 1 small tomato, diced (or use cherry tomatoes, halved)
  • 1 avocado, diced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Sour cream, for drizzling or dipping
  • Salsa, for serving
  • Guacamole or extra avocado, for serving
  • Fresh lime wedges, for garnish

Instructions

  1. Preheat and prep by preheating your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. Build the base with the tortilla chips in an even layer on the baking sheet. You want good chip coverage, but avoid overlapping too much to ensure every bite gets a bit of topping love.
  3. Layer it up with half of the shredded cheese over the chips. Then scatter the black beans, bell pepper, red onion, and jalapeño (if using). Finish with the rest of the cheese on top. The double layer of cheese melts through the veggies and helps everything stick together.
  4. Bake the tray in the oven and bake for 8–10 minutes, or until the cheese is fully melted and starting to bubble. Keep an eye on it—nachos can go from melty to crispy fast!
  5. Add fresh toppings out of the oven, immediately top with diced tomato, avocado, green onions, and cilantro. A squeeze of fresh lime adds a bright finish.
  6. Serve with dips to a platter (or serve straight from the pan!) and add dollops of sour cream, salsa, and guacamole on the side. Or drizzle sour cream over the top for extra flair.
