A delicious cheesy taco potato bake that is hearty and comforting.
Ingredients

- 2 lbs starchy potatoes (e.g., Russets), sliced
- 1 lb lean ground beef
- 1 packet taco seasoning (about 1 oz)
- 1 cup sour cream
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 cup bell peppers, diced
- 1/4 cup green onions, chopped
Instructions
- Preheat oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
- Stir in taco seasoning with 1/2 cup water and simmer for about 5 minutes.
- Layer half of the sliced potatoes in the baking dish, followed by half of the beef mixture. Repeat layers.
- Spread sour cream on top and sprinkle with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
Notes
- This recipe can be customized with additional vegetables.
- For extra flavor, consider adding jalapeños or using a spicy taco seasoning.
