- 1 pound fresh green beans
- 1 ripe avocado
- 2 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and trim the green beans.
- Boil salted water; add green beans and cook for 3 minutes until bright green but crisp.
- Shock in an ice bath to halt cooking; drain.
- In a blender, combine avocado, garlic, Parmesan, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Toss cooled green beans with the dressing until evenly coated.
- Serve immediately or chill before serving for enhanced flavors.
