- 1 cup dark chocolate (70% cocoa)
- 1/2 cup unsalted butter (1 stick)
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/2 cup fresh pitted cherries (or thawed frozen cherries)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 425°F (220°C) and grease four ramekins with butter.
- Melt dark chocolate and butter together over simmering water until smooth.
- Mix in granulated sugar, then add eggs one at a time, stirring well after each addition.
- Gently fold in flour until just combined, then incorporate the cherries.
- Fill ramekins three-quarters full with batter and place on a baking sheet.
- Bake for 12-14 minutes until edges are set but centers jiggle slightly.
- Let cool for 1 minute before flipping onto plates and dusting with powdered sugar.
