Description

A refreshing salad combining hard-boiled eggs, tomatoes, and saltine crackers, ideal for a light meal.


Ingredients

  • 8 saltine crackers
  • 4 hard-boiled eggs
  • 1 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/3 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Boil the eggs by placing them in a saucepan, covering with water, and bringing to a boil. Cover, remove from heat, and let sit for 10–12 minutes. Cool in an ice bath and peel.
  2. Chop the boiled eggs, tomatoes, and red onion. Remove excess seeds from tomatoes if they are too juicy.
  3. Lightly crush the saltine crackers into bite-sized chunks by hand.
  4. In a large mixing bowl, gently combine the chopped eggs, tomatoes, onion, and crushed crackers.
  5. Add mayonnaise and chopped dill. Stir gently until evenly mixed. Add more mayo if needed.
  6. Season with salt and black pepper to taste. Stir gently one last time.
  7. Serve immediately, garnished with extra dill on top.

Notes

  • This salad is best enjoyed fresh. If it sits for too long, the crackers may become soggy.
