A refreshing salad combining hard-boiled eggs, tomatoes, and saltine crackers, ideal for a light meal.

- 8 saltine crackers
- 4 hard-boiled eggs
- 1 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/3 cup mayonnaise
- 2 tablespoons chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Boil the eggs by placing them in a saucepan, covering with water, and bringing to a boil. Cover, remove from heat, and let sit for 10–12 minutes. Cool in an ice bath and peel.
- Chop the boiled eggs, tomatoes, and red onion. Remove excess seeds from tomatoes if they are too juicy.
- Lightly crush the saltine crackers into bite-sized chunks by hand.
- In a large mixing bowl, gently combine the chopped eggs, tomatoes, onion, and crushed crackers.
- Add mayonnaise and chopped dill. Stir gently until evenly mixed. Add more mayo if needed.
- Season with salt and black pepper to taste. Stir gently one last time.
- Serve immediately, garnished with extra dill on top.
Notes
- This salad is best enjoyed fresh. If it sits for too long, the crackers may become soggy.
- Feel free to adjust the seasoning to your preference.
