A delicious, creamy caramel made from dates and coconut milk.
Ingredients

- 15 dates, pitted
- ½ cup full-fat coconut milk (use the solid part on top)
- 2 teaspoons vanilla paste or extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
Instructions
- Soak the dates in boiling water for about 15 minutes to soften.
- Transfer the soaked dates to a high-powered blender with the solid part of the coconut milk. Blend until smooth and creamy.
- Pour the mixture into a jar and stir in vanilla, salt, and cinnamon until well incorporated.
- Let the caramel cool completely before covering and refrigerating.
Notes
- For a thicker caramel, use less coconut milk.
- This caramel can be used as a dip or spread.
