- 1½ pounds boneless skinless chicken breasts
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1 (15-ounce) can diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1½ cups small pasta (like ditalini or rotini)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup shredded turkey ham (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Layer it up – Start by adding your chicken breasts directly into the crockpot. Then toss in the chopped onion and minced garlic. Pour in both the crushed and diced tomatoes, tomato paste, all your dried herbs, salt, pepper, and red pepper flakes if you like a bit of heat. Finally, add the chicken broth. Give everything a gentle stir to combine.
- Let the magic happen – Cover and cook on low for 6–8 hours or high for 3–4 hours. The chicken will become beautifully tender and flavorful as it slow cooks in the tomato-rich broth.
- Shred the chicken – Once the chicken is cooked through, remove it from the crockpot and shred it using two forks. Return it to the pot and stir it back in.
- Add pasta – About 20–30 minutes before serving, stir in the pasta. Cover and let it cook until tender. Keep an eye on it—overcooked pasta can get mushy in a slow cooker.
- Add the cheese – Right before serving, stir in the mozzarella and Parmesan cheese. If you’re using turkey ham, you can add it here too. The cheeses will melt into the soup, creating a rich and creamy texture.
- Serve and enjoy – Ladle the soup into bowls, garnish with fresh parsley, and maybe a little extra Parmesan on top. Serve it with crusty bread or garlic knots for the ultimate comfort meal.
