- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Set aside.
- Cream the Butter and Sugar: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 2–3 minutes. This step is key for a soft and airy texture.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract. Mix until everything is well combined.
- Add Sour Cream and Peaches: Fold in the sour cream, followed by the diced peaches. Be gentle here so the peaches stay in nice chunks and don’t break down too much.
- Combine Wet and Dry Mixtures: Slowly mix the dry ingredients into the wet ingredients. Stir just until combined—overmixing can make the bread dense.
- Add Optional Cinnamon Sugar Topping: If you’d like a sweet crust, mix the brown sugar and cinnamon together and sprinkle it over the batter once it’s poured into the loaf pan.
