Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Set aside.
  3. Cream the Butter and Sugar: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 2–3 minutes. This step is key for a soft and airy texture.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract. Mix until everything is well combined.
  5. Add Sour Cream and Peaches: Fold in the sour cream, followed by the diced peaches. Be gentle here so the peaches stay in nice chunks and don’t break down too much.
  6. Combine Wet and Dry Mixtures: Slowly mix the dry ingredients into the wet ingredients. Stir just until combined—overmixing can make the bread dense.
  7. Add Optional Cinnamon Sugar Topping: If you’d like a sweet crust, mix the brown sugar and cinnamon together and sprinkle it over the batter once it’s poured into the loaf pan.
